The process of refining chocolate produces, at one point, small pieces of pure 100% raw cocoa. These are called nibs and are not usually used without further processing. But they can be, and we do, to bring you an intense cocoa experience. Cocoa nibs offer all of the natural nutrition of 100% cocoa beans. The minimal processing encourages retention of the natural vitamins, minerals, and antioxidants of the cocoa bean. The nibs give a nut-like crunch to the bar and also add a broadening of the chocolate experience that some have called “the essence of chocolate”.
